When you track what you eat every day (view my profile here) and watch what all your friends eat too, you tend to get food envy. So one day when my mom ate nothing for lunch except banana bread, I knew it had to be good.
Apparently it was my sister's recipe and it was ah-maze-balls! When I recently traveled to Pittsburgh and walked into my sisters house and saw said bread on her counter, I knew I had to try it. The streusel topping is what makes it and TRUST ME you won't be disappointed if you try out this recipe.
I did, however, mess up my streusel topping so just ignore anything in the pictures that looks out of the ordinary and pretend everything turned out just as planned. Truth be told, it was still pretty awesome just not as awesome as it could have been. So leave off the topping or don't, it doesn't matter.
Ingredients:
2 Cups Flour
1 and 1/2 t baking powder
1/2 t baking soda
1/4 t salt
1/4 t cinnamon
1/8 t nutmeg
2 eggs beaten
1 and 1/2 cups mashed bananas (about 5 medium)
1 cup sugar
1/2 cup melted butter, margarine or cooking oil
1/4 walnuts (optional)
Streusel Topping (recipe below)
Directions:
Preheat oven to 350 degrees
Grease bottom of bread pan
Combine flour, baking powder, baking soda, salt, cinnamon and nutmeg in large bowl and set aside
Combine eggs, bananas, sugar, butter
Add egg mixture to the flour mixture all at once
Fold in nuts
Spoon batter into pan
Add streusel topping
Bake for 55 to 60 minutes or until inserted knife comes out clear
For whatever reason, I didn't add the butter to the streusel topping. I kept thinking something didn't seem right, but it still just didn't occur to me. Ugh!
Streusel Topping:
1/4 Cup packed brown sugar
3 T flour
2 T butter
1/3 Cup Chopped Walnuts (optional)
In a small bowl combine brown sugar and flour
fold in butter until mixtures resembles course crumbles
Stir in walnuts
I made these loaves for Ella's teachers during teacher appreciation week and I hope they enjoyed them. They may not have had the perfect streusel topping, but I hope they enjoyed it anyway and I hope you will too.
